CHEESY VEGGIE SALAD
MAKES 8 SERVINGS.
2 tbs red wine vinegar
Salt and Pepper
1 tsp Dijon mustard
1/4 cup oil
1 pound spinach leaves
1/2 cup crumbled blue cheese
1/2 cup shelled, toasted pistachios, chopped
Combine vinegar, salt, pepper and mustard in a bowl. Whisk in oil. Toss spinach in dressing. Divide among 8 plates, top with cheese and nuts. SERVE & ENJOY...
