CHEESY SQUASH CASSEROLE
MAKES 2 SERVINGS.
3/4 pound zucchini and/or yellow squash, sliced
1 onion, minced
1 clove garlic, minced
2 1/2 tbs butter
1 cup stuffing mix
1 egg, beaten
1 tbs sliced sun dried tomatoes in oil, drained
1/2 cup grated Parmesan cheese
1/4 cup baking mix Bisquick
Heat oven to 350 degrees. In skillet, cook squash, onion, and garlic in 1/2 tbs butter until lightly browned. Season with salt and pepper. Set aside. Prepare stuffing mix as package directs. *STIR in egg, tomatoes and vegetables. Spoon into greased casserole dish. In bowl, mix cheese, baking mix and remaining butter until crumbly. Sprinkle over stuffing mixture. Bake 45 min. or until done. SERVE & ENJOY...
