VEGGIE TERIYAKI MEAT-LOAF
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound ground beef
1 egg
1/3 cup breadcrumbs
1 tbs grated ginger
1 clove garlic, minced
1 tbs soy sauce
1 tsp sesame oil
1/3 cup teriyaki sauce
3/4 pound green beans, trimmed
In bowl, combine first 6 ingredients and 1/2 tsp oil. On lined baking sheet, shape into loaf. Drizzle with half the teriyaki sauce, bake at 375 degrees for 20 min. In bowl, toss beans with remaining oil, season. Top meat loaf with remaining teriyaki sauce, surround with beans. Bake until meat loaf edges are browned and beans are tender 20 min. SERVE & ENJOY...
