[SimplifyMe] Triple Citrus (Chicken)

 

TRIPLE CITRUS CHICKEN
MAKES 6 SERVINGS.

4 tbs oil
1 lemon, zested, juiced
1 lime, zested, juiced
1 orange, zested, juiced
3 tbs minced herbs, rosemary, parsley, thyme and/or sage
1 whole roaster chicken

Heat oven to 375 degrees. In bowl, combine oil, 1 tbs each lemon and lime juice, 1 tsp each lemon and lime zest, 2 tbs orange juice, 2 tsp orange zest and herbs. Season with salt and pepper. *Place chicken on rack set in roasting pan, spread herb mixture under and over chicken skin. *Add 2 cups water to pan. Roast 1 1/2 hours. Transfer chicken to platter, let sit 10 min. before slicing. SERVE & ENJOY...
