HERB MASHED POTATOES
MAKES 6 SERVINGS.
2 pounds potatoes, peeled, diced
4 tbs oil
1 cup chicken broth, heated
2 tbs minced thyme
1/2 cup minced green onions
Bring to a boil potatoes and enough salted water to cover. Let simmer until tender. Drain, return to pot. Add next 3 ingredients, mash. Add green onions. Season with salt and pepper. SERVE & ENJOY...
