[SimplifyMe] Slow-Cooker Chile {Pork}

 

SLOW-COOKER CHILE PORK
MAKES 8 SERVINGS.

1 1/2 pounds Anaheim chiles
4 pounds boneless pork shoulder
Salt and Pepper
28 oz can green enchilada sauce
4 tomatillos, husked, quartered

Heat broiler. Place chiles on a baking sheet. Broil until skin is blackened. Place in a bowl, seal with plastic wrap. Let stand until skin has softened. Peel, seed, chop chiles. *Season pork with salt and pepper. Place in a slowcooker. Add chiles, enchilada sauce and tomatillos. Cook on low until meat is tender 7 hours. Remove pork to a baking dish, shred. Place pork back in slowcooker, rewarm. Season with salt and pepper. SERVE & ENJOY...
