HONEYED LEEKS "N' CARROTS
MAKES 6 SERVINGS.
1 pound baby carrots
1/2 cup sliced leeks
1 tsp ginger
1 tbs honey
1 tsp oil
1 lemon, zested, juiced
In skillet, combine first 5 ingredients and 2 tbs lemon juice. Let simmer until carrots are tender and liquid thickens slightly. Stir in 1 tsp lemon zest. Season with salt and pepper. Arrange on platter. SERVE & ENJOY...
