[SimplifyMe] Cheesy Squash (Pasta) TNT

 

CHEESY SQUASH PASTA
MAKES 2 SERVINGS.

Salt
6 oz penne pasta, I used elbow macaroni
1 tbs oil
1 cup diced peeled butternut squash
Pepper
6 oz mushrooms, sliced
2 cloves garlic, minced
1 onion, minced
1/4 tsp red pepper flakes
1/2 cup grated Parmesan cheese
1 1/2 tbs oregano, I used parsley

Bring a pot of salted water to a boil. Add pasta, cook as label directs, reserve 1 cup cooking water, drain. Heat 1 tbs oil in a skillet. Add squash, salt and pepper. Cook until golden and tender. Transfer to a plate, set aside. *Add remaining oil, mushrooms, salt and pepper to skillet. Cook until lightly browned. Add garlic, onion and pepper flakes. Cook until onion softens. *Add pasta, squash and 1/2 cup cooking water to skillet. Cook until heated through. Stir in 1/2 cup Parmesan. Stir in oregano, season with salt and pepper. Top with remaining Parmesan. SERVE & ENJOY...
