[SimplifyMe] Cheesy Sweet-Potato {Casserole}

 

CHEESY SWEET-POTATO CASSEROLE
MAKES 8 SERVINGS.

4 cups heavy cream
3 sprigs thyme
Salt and Black pepper
2 cloves garlic, crushed
A pinch crushed red pepper
4 pounds sweet potatoes, peeled, cut into rounds
2 cups grated cheddar cheese
1 cup breadcrumbs
1/2 cup brown sugar or Splenda
1 tsp grated lemon zest
1 green onion, sliced

Heat oven to 350 degrees. In a pan, combine first 6 ingredients. Bring to a simmer, remove from heat, let steep 5 min. Discard thyme sprigs. Drizzle 2 tbs cream mixture in bottom of a 9x13" baking dish. *Cover bottom of pan with a layer of potato slices. Season with salt and pepper, drizzle with 1/4 cup cream mixture. Continue layering with remaining potato slices, salt, pepper and cream. Top with remaining cream, then sprinkle with cheese. *Cover with foil, tenting to prevent cheese from sticking. Bake until done 1 hour 20 min. In a bowl, combine breadcrumbs, brown sugar, pepper, zest and salt. Uncover casserole, sprinkle top with breadcrumb mixture, bake 10 min. Broil casserole until browned and crunchy. Let rest 15 min. before serving. Top with green onions. SERVE & ENJOY...
