ZESTY MEXICAN BURRITOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound pork tenderloin, cut into strips
2 tsp chili powder
Salt
2 tbs oil
1 onion, sliced
1 bell pepper, sliced
1 cup corn kernels
1/2 cup green salsa
3 tbs chopped chives
4 flour tortillas, warmed
1/4 cup sour cream
In a bowl, combine pork, chili powder, and salt. In a skillet, heat 1 tbs oil. Add pork, cook until its browned and almost cooked through. Transfer to a plate. *Add remaining oil to skillet. Add onion and pepper, cook until slightly softened. Stir in corn and salt, cook 2 min. Return pork to pan, cook until cooked through. Stir in salsa, cook 30 seconds. Remove from heat, stir in chives. *Place one tortilla on a work surface. Spread 1/4 of pork mixture in a rectangle in center. Top each with 1 tbs sour cream, roll up burrito style. Repeat with remaining tortillas and fillings. SERVE & ENJOY...
