YOGURT DIP WITH VEGGIES
MAKES 8 SERVINGS.
1 tsp oil
2 tbs grated onion
1 tsp curry powder
1 1/2 cups plain Greek yogurt
1 avocado, pitted, peeled, diced
1 tbs lemon juice
Salt and Pepper
Assorted veggies
Warm oil in a skillet. Cook onion until tender. Stir in curry powder, saute 30 seconds. Transfer to a bowl, let cool. *In a blender, combine yogurt, avocado and lemon juice. Add onion mixture, process until smooth. Season with salt and pepper, refrigerate 2 hours. SERVE with veggies & ENJOY...
