SKILLET CHICKEN---Makes a yummy meal.
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
6 slices bacon
1/2 cup oil
4 chicken drumsticks and 4 chicken thighs
Salt
1 pound potatoes, halved lengthwise
2 tbs oil
2 onions, sliced
4 red bell peppers, seeded, cut into 1/2" pieces
2 sprigs rosemary
Cut bacon slices in half crosswise, roll up each piece, secure with a toothpick. Heat oil in a skillet. Season chicken with salt. Add half the chicken to skillet, scatter bacon around chicken, cook until chicken is golden and bacon is crisp. Transfer chicken and bacon to a plate. Repeat with remaining chicken pieces. *Return skillet to heat. In a bowl, toss potatoes with oil, season with salt. Transfer potatoes to skillet, cook until golden and crisp. Turn, cook until crisp. Add onions, peppers and rosemary, toss. Cook 5 min. *Return bacon and chicken to pan among vegetables, cook until any liquid has evaporated, chicken is cooked through and potatoes are tender.
