[SimplifyMe] Lemon Ice-Cream (Bars)

 

LEMON ICE-CREAM BARS
MAKES 9 BARS.

FOR LEMON CURD---
6 egg yolks
1 cup sugar
1 cup lemon juice
12 tbs unsalted butter
1/2 tsp grated lemon zest
Pinch of salt
FOR BARS---
Two 6 oz boxes shortbread cookies
3 tbs unsalted butter, melted
1/2 tsp grated lemon zest
2 pints vanilla ice cream, slightly softened
Powdered sugar

MAKE LEMON CURD---Combine yolks, sugar and juice in a pan, cook until mixture begins to thicken. Stir in butter, cook until thick. Strain into a bowl. Stir in zest and salt. Fill a bowl halfway with ice. Set bowl of curd on ice, let cool. *MAKE BARS---Coat an 8" square baking dish with cooking spray, line with foil, leaving an overhang. Pulse cookies in a blender until crushed. Add butter and zest, pulse until mixture starts coming together. *Transfer crumb mixture to baking dish, press into bottom. Spread ice cream over crumb mixture, spread lemon curd on top. Cover with plastic wrap, freeze 4 hours. *Lift out of pan using foil. Cut into pieces, dust with powdered sugar. SERVE & ENJOY...
