[SimplifyMe] Fruit Veggie (Salad)

 

FRUIT VEGGIE SALAD
MAKES 6 SERVINGS.

1 cup raspberries
3 tbs oil
1 tbs red wine vinegar
1 tsp honey
1 pound asparagus, trimmed
1 cup frozen peas
3 cups torn lettuce
1 1/2 cups chopped radishes
2 tbs sliced onions

In bowl, mash 1/4 cup raspberries. Add oil, vinegar and honey, whisk until blended. Season with salt and pepper. In pot of boiling salted water, cook asparagus until tender, adding peas during last minute, drain. *Arrange lettuce on platter. Top with asparagus, peas, radishes, onions and remaining raspberries. Drizzle with vinaigrette just before SERVING & ENJOY...
