[SimplifyMe] Fluffy Fish {Omelet}

 

FLUFFY FISH OMELET
MAKES 1 SERVING.

6 oz lowfat cream cheese
2 tbs lowfat sour cream
1 1/2 tsp chopped dill
1 1/2 tsp lemon juice
1/8 tsp black pepper
2 tsp canola oil
3 eggs, beaten
2/3 cup sliced green onions
4 oz sliced smoked salmon

In a pan, whisk first 5 ingredients. Heat until warmed through. Remove from heat. In a skillet, heat oil. Add eggs, stir until eggs are almost set, spread eggs over skillet. *Place green onions, 1/3 cup cream cheese mixture and salmon over half the omelet. When bottom is set, fold omelet over. Slide onto a plate. SERVE with remaining cream cheese mixture. Sprinkle with dill & ENJOY...
