EASTER LAMB CAKES
MAKES 12 SERVINGS.
16 oz pkg pound cake mix
1/2 cup chopped almonds
1 tsp almond extract
1/4 cup apple jelly, melted
1 1/2 cups grated unsweetened coconut
1 tbs vanilla frosting
Assorted sprinkles or candies
Grease and flour 6 well mini lamb pan. Prepare cake mix as package directs, adding almonds and extract. Spoon 1/2 into pan. Bake at 325 degrees for 15 min. or until done. *LET cool 10 min. unmold. Wash pan, repeat. Brush jelly on lamb bodies, heads and noses, add coconut. With frosting, pipe on eyes. Decorate with sprinkles. SERVE & ENJOY...
