NUTTY CHOCOLATE CAKE
MAKES 24 PIECES.
1 cup chopped walnuts
1 tsp vanilla
2 eggs
1/2 tsp salt
2 cups sugar
1/2 cup plus 1tbs unsweetened cocoa
1 pound powdered sugar
1/4 cup plus 2 tbs milk
1/2 cup sour cream
1 tsp baking soda
2 cups sifted flour
24 tbs unsalted butter
Heat oven to 375 degrees. Mist a sheet pan with cooking spray. Combine 16 tbs butter, 5 tbs cocoa and 1 cup water in a pan. Bring to a boil. Remove from heat. In a bowl, combine flour, sugar, baking soda and salt. Stir in cocoa mixture, then sour cream and eggs. Spread batter in pan. Bake until done 22 min. TO MAKE ICING---Combine 8 tbs butter, milk and 1/4 cup cocoa in a pan. Bring to a boil. Remove from heat, add vanilla, whisk in powdered sugar. Smooth icing onto hot cake, sprinkle with nuts. Cool. Cut into 24 pieces. SERVE & ENJOY...
