[SimplifyMe] {Crab-Cakes} with Lemony-Mayo

 

CRAB-CAKES WITH LEMONY-MAYO
MAKES 2 SERVINGS.

1/2 tbs oil
1/2 cup chopped red bell pepper
1 1/2 tbs chopped celery
1/8 cup sliced green onions
1/2 pound lump crabmeat, shell pieces removed
1/3 cup panko breadcrumbs
1 tbs chopped dill
1/8 tsp red pepper
1 egg
1 egg white
1/8 cup mayonnaise
1/2 tsp grated lemon rind
1 tbs lemon juice

Heat a skillet. Add 1 tsp oil to pan. Add bell peppers, celery and green onions to pan, saute until vegetables are tender. Place vegetable mixture, crab, panko, 1/2 tbs dill, red pepper, egg and egg white in a bowl, stir. Shape crab mixture into 4 patties. WIPE pan with paper towels. Return pan to heat. Add remaining oil. Add patties to pan, cook until golden and heated through. Combine remaining dill, mayonnaise, lemon rind and lemon juice in a bowl, stir. Top each crab cake with 2 tsp mayonnaise mixture. SERVE & ENJOY...
