LAMB-SKEWERS WITH PEPPERS
MAKES 4 SERVINGS.
2 green onions
2 tbs honey
2 tbs dark sesame oil
2 tbs soy sauce
1 tsp crushed red pepper
3 garlic cloves, minced
1 pound lamb top round, cut into pieces
1 yellow bell pepper, cut into pieces
1/4 tsp salt
Slice green onions, reserving 2 tbs. Combine remaining green onions and next 5 ingredients in a bowl. Add lamb and bell pepper to bowl, toss well. Thread lamb and bell pepper pieces onto each of 4 skewers. HEAT grill. Coat with cooking spray. Add skewers, grill until lamb is desired doneness. Remove skewers to a platter, sprinkle with reserved green onions and salt. SERVE & ENJOY...
