TURKEY-SCHNITZEL WITH SLAW
MAKES 4 SERVINGS.
4 turkey cutlets
2 tbs water
2 egg whites
3/4 cup plain breadcrumbs
1 oz Parmesan cheese, grated
1/2 tsp salt
2 tbs oil
1 1/2 tbs lemon juice
1/2 tsp black pepper
1/4 cup parsley leaves
1 head radicchio, sliced
1 apple, sliced
Pound turkey cutlets to 1/8" thickness. Combine 2 tbs water and egg whites in a dish. Combine breadcrumbs and cheese in a dish. Dip cutlets in egg mixture, dredge in breadcrumb mixture. HEAT a skillet. Coat with cooking spray. Cook 2 cutlets 3 min. on each side. Repeat with remaining cutlets. Sprinkle with 1/4 tsp salt. Combine 1/4 tsp salt, oil, juice and pepper. Add parsley, radicchio and apple, toss to coat. SERVE with cutlets & ENJOY...
