LEMONY SHRIMP QUINOA
MAKES 2 SERVINGS.
1 onion, chopped
Salt and Pepper
1 tbs chopped parsley
1 tbs lemon juice
1/2 tsp grated lemon zest
6 oz shrimp, peeled, deveined
3/4 cup quinoa, rinsed, drained
1 tbs oil
Warm oil in a pan. Add onion, cook until softened. Add quinoa, cook 1 min. Add 1 1/8 cups water and salt to pan. Bring to a boil. Cook until quinoa is tender, stirring in shrimp during final 5 min. CHECK that shrimp is cooked through and most of water has been absorbed. Remove from heat, let stand 10 min. Transfer mixture to a bowl. Stir in parsley, zest and juice. Season with salt and pepper.
