LEMONY POPCORN WITH CHEESE
MAKES 6 SERVINGS.
2 tsp grated lemon rind
1 tsp black pepper
1/4 tsp salt
1.5 oz Parmesan cheese, grated
2 tbs oil
1/2 cup popcorn kernels
Combine first 4 ingredients in a bowl. Heat oil in a pan. Add popcorn to oil in pan, cover cook until kernels begin to pop. Continue cooking 1 min. shaking pan. When popping slows down, remove pan from heat. Let stand until popping stops. Pour 6 cups popcorn into a bowl, stir in half of cheese mixture. Stir in remaining popcorn and remaining cheese mixture, toss. Let stand 1 min. then SERVE & ENJOY...
