[SimplifyMe] Cheesy Vegetable {Burritos}

 

CHEESY VEGETABLE BURRITOS
MAKES 2 SERVINGS.

1 1/2 tbs oil
1 red bell pepper, seeded, sliced
Salt
1/2 tbs chopped parsley
1/4 tsp hot sauce
2 oz shredded Monterey Jack cheese
2 flour tortillas
3/4 tbs lime juice
7.5 oz canned black beans, drained
1 clove garlic, minced
1 onion, sliced

In a skillet, warm 1 tbs oil. Add onion, bell peppers and garlic, sprinkle with salt, cook until vegetables have softened. Remove from heat. Combine beans, parsley, lime juice, hot sauce and 1/2 tbs oil in a bowl, season with salt. WARM a skillet. One at a time, add tortillas, let cook to soften. Spread 1/4 of onion mixture along center of each tortilla. Top with bean mixture and 1/4 of cheese. Fold in sides and roll up tightly. Repeat. Cut burritos in half. SERVE immediately & ENJOY...
