[SimplifyMe] Chocolate Gingerbread {Kids}

 

CHOCOLATE GINGERBREAD KIDS
MAKES 32 COOKIES.

2 cups flour
2 1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp salt
3/4 cup sugar
2 tsp vanilla
1 egg
3/4 cup unsalted butter
1/2 tsp baking powder
1 1/2 tsp cinnamon
1/2 cup unsweetened cocoa
White icing
Gel paste food colors
White sanding sugar
Powdered sugar
Gingerbread man cookie cutter

In a bowl, whisk together flour, cocoa, ginger, cinnamon, nutmeg, baking powder and salt. Beat butter and sugar in a bowl until fluffy. Beat in egg and vanilla. Add flour mixture, mixing until incorporated. Shape dough into four 1" thick disks, roll each between 2 sheets wax paper to 1/8" thick. Refrigerate until firm. USING cookie cutter, cut cookie dough, refrigerate until firm. Reroll, chill, cut scraps. Heat oven to 350 degrees. Line baking sheets with parchment. Place cookies on sheets. Bake until cookies are set 12 min. Let cool on sheet 3 min. then transfer. ICING---Separate icing into bowls and tint different colors. Transfer 1/3 of each color to separate pastry bags fitted with fine tips. Use a few drops of water to thin icing remaining in bowls for flooding, place in separate plastic bags, snip off corners. Using the thicker icing, outline clothes on each cookie, then fill using thinner flooding icing. Let dry between colors, sprinkle with sanding sugar while icing is wet. Dust a platter with a thick layer of powdered sugar. Place decorated cookies on sugar or snow. SERVE & ENJOY...
