FRIED-RICE WITH ALMONDS
MAKES 2 SERVINGS.
1/2 tbs oil
1/4 cup sliced onion
1/2 tsp minced garlic
3/4 cup sliced red bell pepper
1/8 cup sliced almonds
4.5 oz precooked brown rice
1/2 tbs lime juice
1 tsp yellow curry paste
1/8 cup cilantro leaves
1/8 tsp salt
Heat a wok or skillet. Add oil. Add onion and garlic, stir fry 1 min. Add bell pepper and nuts, stir fry 2 min. Add rice, stir fry 1 min. Stir in lime juice and next 3 ingredients. SERVE & ENJOY...
