MAC-N-CHEESE WITH BROCCOLI
MAKES 2 SERVINGS.
4 oz elbow macaroni
1 cup chopped broccoli florets
3/4 cup milk
1 tbs flour
1/2 tsp chopped thyme
1 tsp Dijon mustard
1 tsp Worcestershire sauce
Salt to taste
1 bacon slice, chopped
3/4 tsp unsalted butter
2.5 oz cheddar cheese, shredded
Cook pasta according to package directions, omitting salt and fat. Add broccoli during last minute of cooking, cook for 1 min. Drain. Combine milk and next 5 ingredients in a bowl, stirring until smooth. HEAT a skillet. Add bacon, cook until crisp. Add butter to pan, swirl until butter melts. Add milk mixture to pan, bring to a boil. Cook 1 min. Stir in cheese. Add pasta mixture to pan, stirring to coat. SERVE & ENJOY...
