BACON VEGGIE PORK CHOPS
MAKES 4 SERVINGS.
1 tbs cider vinegar
1/2 tsp dried thyme
3 cups sliced cabbage
4 thin boneless pork chops
3 slices bacon, chopped
1 tbs brown sugar
1 onion, sliced
Salt
1/4 cup flour
In a skillet, cook bacon until crisp. Remove bacon to paper towels. Drain off all but 2 tbs fat. Place flour in a bowl. Sprinkle pork chops with salt, dredge in flour. Add pork chops to skillet, cook until browned on both sides. Remove to a platter, repeat. ADD cabbage, onion and thyme to skillet, cook until softened. Stir in sugar and vinegar, cook until cabbage is tender. Spoon cabbage over pork, sprinkle with bacon. SERVE & ENJOY...
