MINTY CHOCOLATE PIE---Topped with cherries and whipped cream.
MAKES 8 SERVINGS.
1 1/4 cups chocolate wafer crumbs
1/4 cup sugar or sub
1/4 cup butter, melted
FILLING---
10 oz pkg miniature marshmallows
1/3 cup lowfat milk
1/4 cup creme de menthe
2 tbs creme de cacao
1/4 tsp peppermint extract
2 cups heavy cream
Maraschino cherries
Whipped Cream
In a bowl, mix wafer crumbs and sugar, stir in butter. Press onto bottom and up sides of a greased 9" pie plate. Refrigerate 30 min. In a pan, combine marshmallows and milk, cook until smooth. Remove from heat. Cool to room temp. *STIR in liqueurs and extract. In a bowl, beat cream until soft peaks form, fold in marshmallow mixture. Transfer to crust. Freeze until firm. Top with cherries and whipped cream before SERVING & ENJOY...
