[SimplifyMe] Herb-Cheese Stuffed {Mushrooms}

 

HERB-CHEESE STUFFED MUSHROOMS
MAKES 24 APPETIZER SERVINGS.

24 mushrooms, trimmed, stems removed, reserved
2 tbs unsalted butter
1 onion, chopped
4 oz ground turkey
Salt and Pepper
1/4 cup breadcrumbs
2 tbs chopped parsley
2 oz goat cheese, crumbled

Heat oven to 400 degrees. Mist a baking dish with cooking spray. Arrange mushrooms in dish. Chop mushroom stems. Melt butter in a skillet. Add onion, mushroom stems and turkey. Sprinkle with salt, cook until onions have softened and turkey is no longer pink. *Transfer turkey mixture to a bowl, let cool 10 min. Stir in breadcrumbs and parsley, fold in goat cheese, season with salt and pepper. Sprinkle mushroom caps with salt and pepper. Spoon filling mixture into mushrooms. Bake until lightly browned 15 min. Let cool slightly before SERVING & ENJOY...
