BACON GREEN-ONION CORNBREAD
MAKES 8 SERVINGS.
1 cup flour
3/4 cup cornmeal
3 tbs sugar or Splenda
1 1/2 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp pepper
1 cup lowfat buttermilk
2 eggs
4 slices bacon, chopped
1 bunch green onions, sliced, green and white parts separated
3 tbs unsalted butter
HEAT oven to 425 degrees. In a bowl, whisk together first 7 ingredients. In a bowl, whisk together buttermilk and eggs. In a skillet, cook bacon until golden but not crisp. Stir in green onion whites and butter. Cook until green onions soften. Whisk buttermilk mixture into flour mixture to combine. Whisk in green onion greens, then mix in hot bacon mixture, leaving some fat in skillet. Pour batter back into hot skillet. Transfer to oven, bake until done 20 min. Let cool in skillet 5 min. before SERVING...
