FRUIT CREAM PARFAITS
MAKES 6 PARFAITS
CREAM---
2 tsp vanilla
1 1/2 tsp unflavored gelatin
1 1/2 cups heavy cream
8 oz container sour cream
3/4 cup sugar
RASPBERRY SAUCE---
1 tbs lemon juice
Raspberries
1 1/2 cups seedless red raspberry preserves
PREPARE CREAM---In saucepan, beat cream and sugar until sugar dissolves. Remove from heat, set aside. In another saucepan, sprinkle gelatin over 1/2 cup cold water, let stand 5 min. Heat until gelatin dissolves. Stir gelatin mixture into cream mixture. Transfer to bowl, then stir in sour cream and vanilla, refrigerate until mixture thickens to consistency of yogurt. PREPARE RASPBERRY SAUCE---In saucepan, heat preserves and lemon juice until hot. Press through fine mesh sieve into bowl, cool. Layer cream mixture and raspberry sauce in 6 glasses. Cover each with plastic wrap, refrigerate until set 2 hours. Top with raspberries before SERVING...
