FISH WITH RELISH
MAKES 2 SERVINGS.
1/4 tsp each pepper and salt
1 tbs each basil leaves, oil and lemon juice
1/4 cup each sliced onion and panko breadcrumbs
1/2 cup grape tomatoes, quartered
2 fish fillets
1 egg white, beaten
Heat oven to 450 degrees. Place egg whites in a dish, place panko in another dish. Dip fish in egg whites, sprinkle fish with 1/4 tsp salt, dredge in panko. Heat oil in a skillet. Add fish to pan, cook until browned and very crispy. Turn fish over, place pan in oven. Bake fish until desired doneness. Combine remaining salt, tomatoes and remaining ingredients in a bowl.
