GLAZED BAKED BEANS
MAKES 6 SERVINGS.
Bottled balsamic glaze
1 tbs lemon juice
2 cups chicken broth
Four 15 oz cans great northern beans, drained
4 cloves garlic, minced
1/2 tsp red pepper flakes
1 carrot, diced
1 onion, diced
1 cup shaved Parmesan cheese
1 tsp grated lemon zest
15 oz can crushed tomatoes
3/4 cup white wine or broth
Salt and Pepper
1 tsp dried Italian seasoning
1 stalk celery, diced
1/2 pound diced bacon
HEAT a pot. Add bacon, cook until crisp. Remove. Add onion, celery and carrot to drippings in pot, sprinkle with Italian seasoning, pepper flakes, 1/2 tsp salt and pepper, cook until vegetables are soft. Add garlic, cook 30 more seconds. Deglaze pan with wine. Simmer until reduced by half. Add beans, tomatoes and broth, simmer until beans are soft. Stir in zest and juice. Remove from heat, stir in bacon, transfer to a dish. Top with Parmesan, cover to melt. Drizzle with balsamic glaze, then SERVE...
