ROASTED PEPPER RELISH
MAKES 5 SERVINGS.
1/4 tsp black pepper
3 tbs olive oil
1 cup chopped basil
1/2 cup sliced rehydrated sun dried tomatoes
1/4 tsp salt
3 tbs balsamic vinegar
1 cup diced cherry tomatoes
4 roasted red peppers, drained, patted dry, cut into pieces
MIX all ingredients in a bowl. Cover, let stand at room temp 1/2 hour before SERVING on meats...
