PAPRIKA SOUR-CREAM POTATOES
MAKES 5 SERVINGS.
1/8 tsp paprika
1/2 tbs dried parsley flakes
1/8 cup 2% milk
4 oz low fat cream cheese, cubed
1/2 tsp garlic salt
1 tbs butter
1/2 cup low fat sour cream
5 potatoes, peeled, quartered
Place potatoes in a saucepan, cover with water. Bring to a boil. Reduce heat, cook until tender. Drain. In a bowl, mash potatoes. Add cream cheese, sour cream, milk, 1/2 tbs butter, parsley and garlic salt, beat until smooth. Spoon into a greased baking dish. Dot with remaining butter, sprinkle with paprika. Bake uncovered at 350 degrees for 40 min. or until heated through, then SERVE...
