HERB RANCH BURGERS
MAKES 6 SERVINGS.
Pepper relish, recipe below
6 hamburger buns, toasted
2 tbs each minced green onions and minced herbs
1 1/2 pounds lean ground beef
Zesty Bruschetta, recipe below
1 cup light ranch dressing
8 oz cremini mushrooms, minced
In bowl, mix ground beef, mushrooms, green onions, herbs and 1/4 cup dressing. Season with salt and pepper. Shape mixture into 6 burgers. Heat grill. Grill burgers until desired doneness. SERVE on buns with remaining dressing and toppings...ZESTY BRUSCHETTA---Saute 1 tsp each garlic and salt in 2 tbs oil. Add 1/4 cup vinegar and 1 tbs brown sugar. Bring to a boil. Toss with 12 halved cherry tomatoes, 1 1/2 cups sliced onions, 1 tbs diced peppers and 2 tbs basil. Chill. PEPPER RELISH---Saute 4 cups sliced peppers and 1 cup sliced onions in 1 tbs oil until tender. Add 2 tbs parsley and 1/4 tsp Italian seasoning.
