SAUSAGE RICE SKILLET
MAKES 5 SERVINGS.
1/2 pound sliced mushrooms
1 yellow bell pepper, chopped
1 onion, chopped
14.5 oz can diced tomatoes with mild green chilies, undrained
2 cups spinach, coarsely chopped
2 cups rice
1 tsp chili powder
8 oz can tomato sauce
2 tsp olive oil
1 pound Italian turkey sausage links, cut into slices
1/2 tsp garlic salt
1 tsp dried oregano
1 1/2 cups water
Cook sausage in a pot until no longer pink, drain. Remove keep warm. Saute mushrooms, pepper and onion in oil in pan until tender. Return sausage to pan. Stir in tomatoes, spinach, water, tomato sauce and seasonings. Bring to a boil, cook 2 min. Stir in rice. Remove from heat, cover, let stand until rice is tender. Fluff, then SERVE...
