SLOWCOOKER PORK SANDWICHES
MAKES 4 SERVINGS.
Grate 1 tsp orange zest into slowcooker. Add 1/2 cup orange marmalade, 1/4 cup brown sugar, 2 tsp cumin, 3 tbs cider vinegar and 1/2 tsp each salt and pepper, whisk to combine. Add 2 1/2 pounds pork shoulder, cut into pieces, and 1 sliced onion, toss to coat. Cook covered until pork is tender and shreds easily 5 hours on high. TEN minutes before pork is done, squeeze 1/4 cup juice from orange into a bowl. Add 1/4 cup sour cream, 1 tsp cider vinegar and 1/4 tsp each salt and pepper, whisk to combine. Shred 1/2 head lettuce. Add it to bowl, toss. Shred pork, stir into cooking liquid. Form sandwiches with 8 rolls, split, pork and slaw. SERVE with potato chips and pickles if desired...
