EASY GARLIC ROASTED CHICKEN
MAKES 4 SERVINGS.
20 garlic cloves, peeled
1 whole chicken
4 lemon wedges
8 thyme sprigs, cut in half
2 tbs butter
1/2 tsp salt
1/8 tsp pepper
Cut 12 garlic cloves in half. Place chicken on a cutting board. Tuck wings under chicken. Cut 24 slits in breasts, drumsticks and thighs. Insert each with a halved garlic. Place lemon wedges, thyme and remaining hole garlic cloves in chicken cavity. Tie drumsticks together. Transfer chicken to a rack in a roasting pan, breast side up. Rub skin with butter, sprinkle with salt and pepper. Roast at 350 degrees for 1 1/2 hours or until done. Remove chicken from oven, tent with foil. Let stand 15 min. before carving, then SERVE...
