SPICY MANGO GUACAMOLE
MAKES 3 CUPS.
1 tbs oil
1 jalapeno chile pepper
1 mango, peeled, pitted, diced
1 tbs chopped cilantro
Juice of 1/2 lime
3 tbs minced onion
Salt and Pepper
3 avocados, halved, pitted, peeled
1/2 cup finely diced peeled jicama
Tortilla chips
Warm oil in a skillet. Add jalapeno, cook until skin blisters. Let cool, then stem and finely chop. Combine chopped chiles with mango, cilantro, lime juice and onion in a bowl. Season with salt and pepper. Mash avocados in a bowl. Mix in mango chile mixture and jicama. Season with salt and pepper. SERVE with chips...
