POTATO BROCCOLI SOUP
MAKES 2 SERVINGS.
3 cups cubed peeled potatoes
1 onion, chopped
2 garlic cloves, minced
2 cups chicken broth
1 1/2 cups water
1/2 tsp black pepper
1/2 tsp salt
3 cups broccoli florets
3 tbs flour
1/3 cup milk
1/2 cup shredded sharp cheddar cheese
In a pan, combine first 7 ingredients, bring to a boil. Reduce heat, simmer until potatoes are tender. Stir in broccoli, return to a boil. In a bowl, whisk flour and milk until smooth, stir into soup. Cook until thickened. Remove from heat, cool slightly. Process in a blender until smooth. Return to pan, heat through.
