[SimplifyMe] Cake with {Butterscotch Sauce}

 

CAKE WITH BUTTERSCOTCH SAUCE
MAKES 8 SERVINGS.

2 cups chopped pitted dates
2 1/2 cups water
2 tsp baking soda
1 2/3 cups sugar or Splenda
1/2 cup butter
4 eggs
2 tsp vanilla
3 1/4 cups flour
2 tsp baking powder
BUTTERSCOTCH SAUCE---
7 tbs butter
2 1/4 cups brown sugar or Splenda
1 cup half and half
1 tbs brandy
1/4 tsp vanilla

In a pan, combine dates and water, bring to a boil. Remove from heat, stir in baking soda. Cool. In a bowl, cream butter and sugar until fluffy. Add eggs, beat well. Beat in vanilla. In another bowl, mix flour and baking powder, add to creamed mixture. Stir in date mixture. Transfer to a greased 13x9" baking pan. Bake at 350 degrees for 40 min. or until done. Cool slightly in pan. In a pan, melt butter, add brown sugar and cream. Bring to a boil. Remove from heat. Stir in brandy and vanilla. SERVE warm over cake...
