CHICKEN BURGERS
MAKES 2 SERVINGS.
1 1/4 pounds ground chicken
1 tbs each olive oil and grated Parmesan cheese
2 small tomatoes, 1 whole, 1 sliced
Juice of 1/4 lemon
2 1/2 oz arugula
2 cups basil
1 1/2 tbs sliced almonds
Salt and Pepper
2 hamburger buns, split open
Combine chicken, 1/2 tsp salt and pepper to taste, mix until combined. Form into 4 patties. Heat oil in a skillet. Add almonds, cook until lightly toasted. Set aside 1/2 tbs almonds for salad, transfer rest to a blender along with oil from pan. Do not wipe out skillet. Increase heat under skillet. Add chicken patties, cook until no longer pink. Add whole tomato to blender, process until smooth. Add basil and 1/4 tsp salt, pulse until almost smooth. Add Parmesan, pulse until combined. Season with salt and pepper. Serve burgers on buns, top each with a spoonful of pesto and a tomato slice. Toss remaining pesto with arugula, reserved almonds and lemon juice. SERVE with burgers...
