SAUSAGE VEGGIE SOUP
MAKES 2 SERVINGS.
2 tsp shredded Parmesan cheese
1/8 tsp pepper
1/2 cup water
8 oz canned cannellini or white kidney beans, drained
1 onion, chopped
1/2 bunch spinach, chopped
1/8 cup white wine or broth
8 oz canned chicken broth
1 garlic clove, minced
2 Italian turkey sausage links, casings removed
Cook sausage and onion in a saucepan until meat is no longer pink, drain. Add garlic, cook 1 min. longer. Stir in beans, broth, water, wine and pepper. Bring to a boil. Add spinach, heat through. Sprinkle with cheese, then SERVE...
