[SimplifyMe] Chowder with {Muffins}

 

CHOWDER WITH MUFFINS
MAKES 4 SERVINGS.

1 tbs oil
3 tbs butter plus 4 tbs softened butter
4 potatoes, diced
1 red bell pepper, seeded, chopped
3 ribs celery, chopped
2 carrots, chopped
1 onion, chopped
1 chile pepper, seeded, chopped
4 cloves garlic, chopped
Salt and Pepper
2 tbs thyme, chopped
6 ears corn, kernels scraped from cobs
2 tbs flour
1 cup beer
1 quart chicken stock
1/4 cup hot sauce
1 cup blue cheese crumbles
4 English muffins
1 bunch green onions, sliced

Heat oil in a pot. Melt 3 tbs butter into oil. Stir in potatoes and next 9 ingredients. Partially cover pot, cook 7 min. Add corn, heat through. Stir in flour, cook 1 min. add beer, stir 1 more min. before adding stock and hot sauce. Bring to a boil, then simmer. Adjust seasonings to taste. In a bowl, stir together softened butter with blue cheese crumbles. Turn on broiler, toast English muffins on both sides, then slather with blue cheese butter. Ladle chowder into bowls, top with green onions. SERVE with blue cheese buttered English muffins alongside...
