CHICKEN LETTUCE WRAP
MAKES 2 SERVINGS.
1 lemon, juiced
2 cloves garlic, grated
1/3 cup olive oil
1/2 tsp paprika
1/2 tsp dried oregano
1/2 tsp coriander
1/2 tsp cumin
2 pieces skinless boneless chicken breast
Salt and Pepper
1/4 seedless cucumber, shredded
1/2 cup Greek yogurt
1/2 cup parsley, mint and dill
1 romaine heart, leaves separated into 4 portions
GARNISHES---Chopped pepperoncini and tomatoes
Combine half the lemon juice, garlic, 1/4 cup oil, paprika, oregano, coriander and 1/4 tsp cumin. Season chicken with salt and pepper, then let stand in marinade 15 min. Salt cucumber in a colander, let rest 10 min. Press out excess liquid. In a food processor, combine cucumber, yogurt, remaining lemon juice, 1 clove garlic, remaining cumin and herbs. Puree then season. Heat a skillet. Shake excess marinade off chicken, place in skillet, cook until cooked through. Slice chicken. SERVE chicken with lettuce for wrapping.
