SPEEDY MARSALA CHICKEN WITH PASTA
MAKES 4 SERVINGS.
1 cup dry Marsala wine or broth
4 cups sliced mushrooms
1/2 tsp salt
1/4 cup flour
8 oz uncooked whole wheat angel hair pasta
1 garlic clove, minced
2 tbs olive oil
1 tsp lemon pepper seasoning
4 boneless skinless chicken breast halves
COOK pasta according to package directions. Pound chicken to 1/4" thickness. In a plastic bag, mix flour, lemon pepper and salt. Add chicken, close bag, shake to coat. In a skillet, heat 1 tbs oil. Add chicken, cook until no longer pink. Remove, keep warm. In same skillet, heat remaining oil. Add mushrooms, cook until tender. Add garlic, cook 1 min. longer. Add wine, bring to a boil. Cook until liquid is reduced by half. Return chicken to pan, turning to coat with sauce, heat through. Drain pasta. SERVE with chicken mixture...
