INDIAN SPICED WRAPS WITH CHICKPEAS
MAKES 4 SERVINGS.
RAITA---INDIAN YOGURT CONDIMENT---
1/4 tsp each salt and cumin
1/2 cup drained unsweetened pineapple tidbits
1 cup reduced fat plain yogurt
WRAPS---
3 cups spinach
1 cup canned crushed tomatoes
1/4 tsp each cayenne pepper, salt, cumin and coriander
1/2 tsp curry powder
1 tbs minced gingerroot
2 tsp canola oil
4 whole wheat tortillas, warmed
15 oz can chickpeas or garbanzo beans, rinsed, drained
2 garlic cloves, minced
1 onion, chopped
In a bowl, mix raita ingredients, set aside. FOR WRAPS---In a skillet, coated with cooking spray, heat oil. Add onion, cook until tender. Add ginger, garlic and seasonings, cook 1 min. longer. Stir in chickpeas and tomatoes. Bring to a boil. Reduce heat, simmer uncovered until slightly thickened. Near the center of each tortilla, arrange spinach and chickpea mixture, top with raita. Roll up tightly. SERVE immediately...
