MARINATED LEMON VEGETABLE SALAD
MAKES 8 SERVINGS.
MARINADE---
2 cinnamon sticks
1/4 tsp each turmeric, cayenne pepper and black pepper
1/2 tsp each paprika and cumin
1 tsp salt
1 1/4 cup olive oil
1 onion, chopped
SALAD---
1/2 head each cauliflower and broccoli, cut into flowerets
1 each green, yellow and orange bell peppers, cut into slices
2 white turnips, peeled, cut into half moons
1 onion, cut into rings
4 cloves garlic, peeled, crushed
1 bunch radishes, each cut in half
Juice of 2 lemons
Rind of 2 lemons in thin strips
2 carrots, peeled, cut into slices
Bring pot of water to a boil. MARINADE---In saucepan, combine oil, onion, salt, cumin, paprika, pepper, cayenne, turmeric and cinnamon sticks. Simmer 5 min. SALAD---To boiling water, add turnips, cauliflower, broccoli, carrots, boil 3 min. Drain, rinse under cold water, drain. In a bowl, combine cooked vegetables with bell peppers, onion, radishes, garlic, lemon rind and juice. Pour hot marinade over vegetables, stir to coat. Cover refrigerate 24 hours. SERVE at room temp...Makes a great side dish.
