[SimplifyMe] Salt Vinegar Fish {Sticks}

 

SALT VINEGAR FISH STICKS
MAKES 6 SERVINGS.

Lemon wedges and/or malt vinegar
2 pounds fish fillets, pin bones removed, cut into 1" wide strips
2 eggs
Salt
10 oz bag salt and vinegar potato chips, finely crushed
Vegetable oil
2 tbs tartar sauce
Pinch of cayenne pepper
1/3 cup flour

COMBINE crushed chips with flour, 1/2 tsp salt and cayenne pepper in a bowl. Whisk eggs, tartar sauce and 3 tbs water in another bowl. Dredge each fish strip in potato chip mixture, turning to coat, then dip in egg mixture. Dredge again in potato chip mixture. Place on a baking sheet until ready to fry. Fill a skillet halfway with oil, heat. Fry fish turning until golden brown and crisp. Drain on paper towels, season with salt. SERVE with lemon wedges and/or malt vinegar and a salad if desired...
